Soak sun dried tomatoes in enough water to cover
for about 1/2-3 hours or until soft. Drain sun dried tomatoes and
save soak water. Using your food processor with the S blade,
process the macadamia nuts and then add the soaked sun dried
tomatoes. If the mixture is too thick for your food processor add
a little of the sun dried tomato soak water until the food
processor runs smooth. Add the basil last and process the mixture
until it forms a thick paste.
*This pate is delicious on almost any vegetable
and could even be used to stuff small tomatoes, peppers, and as a
raw ravioli filling. In the picture I used a
mandoline slicer* to make thin slices
of zucchini. I spread the pate on the slices of zucchini and then
I rolled them up.
