I have been having a blast experimenting with chia seeds. By
adding a tablespoon to my smoothies I have turned any smoothie into
a wonderful tapioca consistency pudding that keeps me full longer
than a regular smoothie because of chia seed's mucilaginous fibers
that make a barrier in the stomach between carbohydrates and
digestive enzymes. The soluble fiber in chia seeds stabilizes blood
sugar by helping you avoid the surges of high and lows and it has
the affect of keeping you full and satisfied for hours!
It is no wonder that chia seeds have been used as a staple food by
the Southwest Indians and were recorded as far back as the Aztecs. The Indians of the
Southwest would eat as
little as a teaspoon when marching for a full day without food and take
them on long travels for sustenance.
Chia seeds have obvious benefits for diabetics, people with blood
sugar issues, and people trying to loose weight.*

These chia seeds are high quality white chia seeds that are
grown without chemicals and are in the process of obtaining
their organic certification.
Directions
Just add a tablespoon to a glass of water and in about 30 minutes you
will have an almost solid gelatin. You can drink the chia seed gelatin
before meal times or you can add the gel mixture to various recipes.
Just make sure not eat more that 1 tablespoon Chia seeds at a time and only eat them if
they have been hydrated for at least a half an hour in water, smoothie,
or other liquid. If they expand too much in your stomach they could give
you an overly full sensation. Please check out the two delicious pudding recipes

Chia Seed Persimmon Pudding
5 cups chopped ripe persimmon (fuju or hachiya variety)
1 cup water
1 teaspoon pumpkin pie spice
seeds from 1 vanilla bean
1 tablespoon chia seeds
Blend all ingredients in the blender until smooth except the chia
seeds. Add blender contents to a bowl and mix in the chia seeds. Let set
for a at least a 1/2 hour. Serves 2-4 people.
Raw Food Rice Pudding
This
reminds me of the
Spanish rice pudding from my childhood
2 cups young coconut meat (about 4
young coconuts)
1 cup pitted dates (soaked in water for at least 1/2
hr. and drained)
1 cup young
coconut water
seeds from
1
vanilla bean *
1
teaspoon lemon zest
1/2 teaspoon cinnamon
2 tablespoons chia seeds
Blend all the ingredients except
for the chia seeds in a powerful blender until ultra
smooth and creamy. Add the blender mixture into a
bowl and mix in the Chia Seeds. Let the pudding set
in the refrigerator for at least a half hour before
serving so the Chia seeds can hydrate.
